Dutch Kills CSA is happy to continue its partnership with Tortillería Nixtamal, a local small business that makes both white and blue corn tortillas, flour tortillas, and nacho chips. The white tortillas and nachos are made with organic corn from a family farm in Illinois. The blue tortillas are also made with organic corn. In 2023 Tortillería Nixtamal started making flour tortillas, however they not organic.
Nixtamal is an Aztec word to describe corn that has been partially cooked and soaked with calcium hydroxide, otherwise referred to as lime. Calcium hydroxide is the dust that results from scraping a limestone rock. The Aztec would grind corn against the limestone found in the riverbeds, and that’s how they discovered the nutritional benefits of nixtamalized corn. If you order a tortilla or nacho share, you will get one delivery every month during our CSA season (June to November), for a total of 6 deliveries. We offer 3 kinds of tortillas: white corn, blue corn, and flour. Corn tortillas come in 1 lb. packages; flour tortillas come in packages of 12. The white corn and blue corn tortillas are 6 inches across. The flour tortillas come in two sizes: 5 inches and 11 inches. Nachos are made with white corn and come in a 3/4 lb. bag.
Deliveries will be on the first Tuesday of each month, except for June. Since our season doesn’t start until the second week of June, the June share can be picked up at our first distribution on June 11.
