Garlic scapes grow from the top of hardneck garlic. Farmers have long known that removing them encourages the plant to direct the energy toward growing a plump underground bulb, but only recently has this agricultural byproduct begun to find its way to farmers’ markets and CSA boxes.
Garlic scapes have a flavor that is milder than garlic, and a texture that is tough and fibrous - therefore one of the best applications is minced or pureed for raw applications. When cooked, the garlic flavor mellows (similar to roasted garlic), and the texture becomes more meaty.
